Xilote means "the hair of the corn" in Nahuatl and also gives its name to a restaurant located in Polanco, in the heart of Mexico City. Its mission is to celebrate the richness of Oaxacan cuisine in a space that blends tradition and modernity.
Inspired by the emblematic Mercado 20 de Noviembre, specifically its iconic "Pasillo de Humo" (Smoke Alley ) , the design seeks to combine culinary authenticity with contemporary architecture that engag es with its urban context. More than just a restaurant, this project is a sensory experience that connects flavors, aromas, and textures with a cultural narrative.


The design of the space incorporates characteristic elements of the market. The ceilings evo ke the exhaust vents of the Pasillo de Humo , while warm, monochromatic earthy tones dominate the space, creating an inviting atmosphere. Exposed materials such as volcanic stone , a signature element of central Mexico, form sloped walls that subtly referenc e pre - Hispanic structures. These slopes serve as a base for steel elements that, together, shape the restaurant’s furniture. The contrast between materials symbolizes the fusion of ancestral and contemporary influences.


The dining experience at Xilote is c entered around a communal atmosphere. Large wooden tables and benches encourage shared seating, fostering an informal interaction among diners. The custom - designed furniture reflects a careful balance between comfort, aesthetics, and functionality, honorin g the rich cultural heritage it represents.
