Dollop Coffee

Carmen Troesser   Acting as architect and builder, our latest project is a renovated existing corner cafe, now home to the modern urban coffee shop — Dollop Coffee. Large windows that allow sunlight to filter deep into the space, custom seating, and a landscaped parkway create warm and inviting spaces to enjoy coffee and made-from-scratch donuts during all four seasons. The challenge with any existing storefront space is maximizing seating for customers without feeling crowded and peeling back layers of dated materials to expose the bones of the building. One never knows what lurks behind crusty old drywall. The upside of tearing down non-load-bearing walls is uncovering hidden architectural features like the exposed mason... More

Forno Cultura

Forno Cultura is a popular contemporary artisanal Italian bakery, one of Toronto’s essential food shops, with a cult-like following among architects and gastronomes alike. Ja Architecture Studio was approached to design the bakery’s fifth outpost in a building on the popular Queen Street West: a 1950’s mechanic shop turned condominium sales centre, set back from the street by a parking lot. The owner wanted to turn this industrial building into a production kitchen and cafe. The existing building was stripped back and repurposed by dividing the large space into two distinct halves--each with a different function and spatial quality. The minimally detailed cafe is juxtaposed with a busy pastry kitchen, in full view as custo... More

New Hotel Mertens

Set in the space of a former hotel lobby, the New Hotel Mertens is a traditional French brasserie offering classics, such as steak frites and coq au vin. The Ghafari team was tasked with repurposing the old hotel lobby and transforming it into a retro-chic restaurant complete with a pastry / coffee counter, long bar, waiting area, and a main dining area.   Our team was responsible for designing the conversion of the historic space into a new restaurant, while maintaining some of the building’s original features, all within a short construction window of five months.   We selected furniture and finishes that incorporate historic elements to complement the sleekness of the bar, tables, and copper pieces lining the walls. Fmts Group – Incibum

By applying Alberti's Renaissance maxim to an industrial building that the house is a small city and a city a large house, an attempt has been made to create a working space in which the perception is that of a strongly anthropocentric system. The FMTS Group project starts precisely on the basis of the pre-existence of a prefabricated box among the many in the industrial suburbs of Campania, originally built as an industrial factory and apparently defined and binding. In the service sector, Eisenman's design concepts "structure, function and technique" can be compared with those of "product, process and production system" dear to the world of industry. In this project, the product, if product can be talked about, is varied between personnel... More

BATTUTO restaurant

APPAREIL architecture faced the challenge of designing a restaurant in the vein of Italian bistros that would reflect the culinary creations of its young chef Guillaume St-Pierre. The team worked hard to create a coherent and authentic decor inspired by the Italian Memphis movement.   Located in the St-Roch district of Quebec City, this 25-seat restaurant takes the place of a former snack bar. The place captured the attention of Guillaume St-Pierre and his associates, Pascal Bussières (sommelier) and Paul Croteau (pastry chef), who were looking for a small space that would inspire conviviality and proximity.   When the chef and his team contacted the young Montreal firm, their idea was crystal clear; create a gathering... Oui J'aime Hotel

The OuiJ’aime Hotel is a wholly unique building, the direct result oflimitations in space combined with the unusual dimensions of the property.   This new destination for visitors to Chachoengsao is owned and operated by the same family that runs Tang SengJua, a famous pastry shop there that sells kanompia, a Chinese-style treat stuffed with mung-bean paste.   With its metal structure, the narrow and long rectangular building is bold and outstanding, its appearance softened by the facade of rusted metal sheets. The overall effect is almost like that of an art exhibition. The artsy facade doubles as a vast partition maintaining the guests’ privacy and as a sunshade during the day. And, because the large su... More

Teller Bakery

Teller Bakery in Modiin IsraelTeller is a well-known bakery based in Jerusalem and provide breads and pastries to the best restaurants and hotels in the city. The new branch is a part of a 5300 square foot bakery and pastry factory.   The bakery Specialty is their sourdough breads therefore it was important for us to place the "bread library" where it`s the first thing you see as you enter the shop.   The design has classic elements referring to the existing brand, however what makes this shop unique is that you can see almost the entire bakery and pastry factory from the shop so we wanted to incorporate industrial elements as well.   From the large viewing window, the customers can see to the baking area and bread oven... Hey Yo Concept

Inspired by the all the pastel colours of macarons, designers have taken and adopted these colours in different areas of the shop. Just like a pastry chef forming different shapes with flour and dough, designer is also forming different shapes of design and furniture. When you enter into the shop, it is like living in the macaron world, colourful and rich in pink tones throughout the whole shop.    On the right side of the main entry, designer placed self-service yogurt machine, toppings counter, cashier counter, ice cream cabinet, etc. Designer used different colours and theme to distinguish the functions of each machine, such as self-service yogurt machine packaged into a yogurt ATM, ingredient cabinet like clip doll machine t... 9Confidentiel Hotel

Located on Rue du Roi de Sicile in the heart of Paris’ 4th arrondissement, the 9Confidentiel hotel is the latest 5-star hot spot, designed from start to finish by designer Philippe Starck. The building’s Art Deco facade with its bow windows houses 29 rooms across six floors, three of which are suites with a panoramic view over the roofs of Paris, as well as a breakfast room, a cocktail bar and a tea room. Shifting between neo-classical and ultra-modern, this intimate space is inspired by the subtle and sophisticated poetry of the 1920s. A location that is passed on in whispers, an invitation to a certain confidentiality...   "9Confidentiel is a little jewelry box where the glimmer of diamonds is the last sparkle of an ove... More

THE CAKE

Kyiv restaurant advocating fashion for unseen before Modern French Pastry has been opened for public in November 2014.Architects disputed about name for the design longer than worked on it, which took record-breaking shortest term: four months from first sketches till open day rehearsal. However, they have eventually reconciled with calling it after music genre – “indie” design. The diversity of images and forms presented in a 80m2-main hall has only been achieved due to the fact that most of design elements have been handcrafted. On the contrast to the piles of cakes of ideal geometrical form installed behind the transparent walls of the kitchen, every floor concrete tile has its wrinkle as each of 10.000 of them has been handcra... Panner

Panner pastry reinvents the tradition of an old family bakery. The simple form of the building , strong stone foundation, the reinterpreted porch, as the link between the interior and the exterior, recovered wood, all remembers elements from the archaic period of the Bran area. At the same time the complete transparency towards the street, the proportions of the building, the treatment of details places the construction in the modern period.   The roof supporting system enriches the simple composition of the facade, being structure and ornament at the same time. From the outside the image is clear, clean, an easy to notice, a point of attraction. Inside, a simple but welcoming ambience, without many decorative elements so the emphasis is on... More

Chefs Club

Background: Located in the landmark Puck Building in lower Manhattan, Chefs Club by Food & Wine is a restaurant that offers culinary events showcasing the magazine’s Best New Chefs platform as well as the work of an international roster of star chefs.   Design Concept: Rockwell Group’s design concept is based on the notion that Chefs Club will break down the boundaries between the chef and guests. The existing turn of the century space has been envisioned to serve as a backdrop for a series of changing art installations that capture “the mind of the chef.”    Design Details: The 4,000 SF first floor dining space is organized into four areas: a bar/lounge, a main dining room, an open studio kitchen, and a chef’s studio/private dining roo...
